This could be every summer meal.

UntitledI’m no food photographer, but holy crap this was good. It’s garlic naan (store bought) topped with pesto (homemade); yellow cherry tomatoes (I’m not a tomato person [I know] but I love these — they’re like introductory tomatoes for people who aren’t ready for the advanced version); fresh mozzarella; and a little basil to garnish. Bake or broil just to warm and melt cheese — or better yet grill, which is what we’ll do next time.

I blew through almost all of my to-do list this weekend. The only un-accomplished items were drink champagne (I had a beer float, which, if you ask me, is close enough); make deodorant (had to order supplies); and set up the pool. The only item from my don’t-do list that I did was spend an afternoon with runner’s tummy. Oh well.

Update: Another phenomenal meal: pesto, farfalle, some sliced Quorn naked chik’n cutlet, and cubed fresh mozzarella, tossed in a bowl.
